Pumpkin Seed time!!!

Around Halloween I always get the hankering for some pumpkin seeds. I don't know if it is the amount of pumpkin seeds that are available, or I want to use my oven cause my house is cold, either way, I tried something new this year, and I think I like it! Here is my recipe below....enjoy!

Niss' pumpkin seeds:

Pumpkin seeds (as many as you want really....I do a sheet cake pan worth)
Johnny's seasoning salt (I purchase mine at costco)

Run pumpkin seeds under the water to clean them. Don't soak them, just rinse.
lay pumpkin seeds spread out on a couple sheets of paper towels overnight to dry.
Next morning, add a tablespoon or two of olive oil in a bowl and run the seeds through the oil. (don't over oil, its better to have less oil than too much)
Add Johnny's seasoning salt (don't be shy on this. initially Johnny's is very strong, but when you bake them, the seasoning tends to fall off)

Bake the seeds on a baking sheet in a heated oven of 375 for 20-25 min, turning the seeds every 5 or so min. (or until they are golden brown)
 I tend to like mine more chewy....so if you like yours more crunchy, increase baking time.

End product: delicious pumpkin seeds!!
