So I always find that the fall is a great time for some homemade granola....ok, who'm I kidding, EVERY season is time for granola!! I just whipped up a batch for my girls brunch on Saturday (per a request from Emily) and wanted to share my recipe. I find that you can really add whatever "add in's" you want, but when I'm looking for a sweet treat, the recipe below is what I love.
Craisin Chocolate Granola
4 Cups Old Fashioned Oats
1/4 C packed brown sugar
1/4 C vegetable oil
1/4 C honey (I love and use Cox's honey from Shelley Idaho for EVERYTHING)
1 teas ground cinnamon
1 1/2 teas vanilla extract
1 cup craisins
1/2 C dark chocolate chocolate chips
Place Oats in a large bowl, set aside. In a saucepan, combine brown sugar, oil, honey, and cinnamon. Bring to a boil. Remove from heat, add in vanilla. Pour over oats, stir till all oats are covered. Spread oats in a shallow pan and pop into the oven for 20 min at 350 degrees. Stir occasionally. Remove from oven, cool. After oats are cooled, add in Craisins and Chocolate chips.
My favorite thing to do with granola is making parfaits. I simply add vanilla yogurt and some fruit. Peters favorite thing to do with granola is pour milk over it and eat it like cereal. Elsje would probably love granola and love dumping it on the ground, but she can't have it yet because of honey. :) Soon though, soon.
